I seriously think this is the most important book in the series.. or I'm not sure but it's very important.
- We finally realise the Ministry isn't exactly very good - We know about the Order and Death Eaters - More about the marauders - Voldermort gaining power
many more, these are just at the top of my head.

I agree, it definately seems like it is the most important. Besides the stuff you said, we also hear the prophecy for the first time and a lot is explained in regards to why Voldemort is after Harry.

Especially at the end where Dumbledore explains EVERYTHING but I also think the 6th is important because we learn about the horcruxes and Voldemort's past
